It was carried out on the clone Saint Domingue of the Cayenne variety, at three maturity stages. These were defined according to shell colour for three weight classes. Twenty fruits were analysed per maturity stage and weight class. Weight, brix degree, total acidity, colour and dry matter were measured. Sensorial analysis was also carried out. When completed, this study will allow a definition of the ideal maturity stage, according to weight, in order to obtain fruits with optimal physical, chemical and organoleptic properties for processing.
